I’m in a bit of shock that May starts tomorrow and we’re already on week 17 of meal planning! Crazy how fast time goes when you’re busy and having fun.
This week I plan to put a lot of work into the house, so meals will be simple so I have more time to paint, clean, and hopefully squeeze in some gardening time.

Week 16 Meal Recap
Monday: Rosemary Roast, baby potatoes, applesauce, and a big salad with carrots.
The kids weren’t psyched about the roast, so I made them another meal and we ate the roast after they were fed and in bed.
Tuesday: Cider glazed pork loins, sweet potato mash, sliced apples, and salad with pears and almonds.
I was pressed for time between errands, and getting prepped for the trip, so we had chicken breasts instead.
Wednesday: Taco night. My ‘famous’ beef recipe with wraps, salsa, fresh guac, and shredded cheese and lettuce on the side.
I was working hard on our bedroom remodel and packing (plus sneaking in a mani/pedi,so we had taco night, but I ate after the kids.
Thursday-Saturday: Disney World’s fabulous offerings for me, while the family eats whatever Nana and Daddy come up with.
It was absolutely delightful to not have to cook, or clean up. The meals catered by Disney were phenomenal, and I never had an issue finding gluten-free foods to eat.
Sunday: Clean out the fridge night-and back to reality for this mom.
We cleaned out the fridge, and I’m slowly reacclimatizing to being home where there is decidely no pixie dust.
Week 17 Meal Plan: Week of April 30th
Monday: Simple Roasted Chicken Breasts, broccoli, gluten-free pasta (with cheese), side of olives, greek inspired salad.
Tuesday: Burgers and hot dogs, super fries , salad.
Wednesday: Brinner aka breakfast for dinner. We’ll be having gluten free pancakes, fruit smoothies, bacon, sausage, and oatmeal. Of course there will be a side of coffee too.
Thursday: Cider glazed pork loin, buttered green beans, spinach salad, fresh sliced apples.
Friday: Make your own pizzas with Udi’s gluten-free pizza crusts and a side of salad.
Saturday: Clean out the fridge night.
Sunday: Since I’ll be running a race this day, I’ll let my hubby take over meal planning since I’m sure I’ll be passed out on the couch by the end of the day.
