April 15th Menu: 365 Day Meal Plan

While I love the warmer weather I kind of hate the back and forth because it’s KILLING my sinuses. Allergies are the payment for springtime’s gorgeous palette.

My obsessions this week include the banana ‘ice cream’ I mentioned last week, as well as everything avocado. I may have bought a few too many for an avocado project I’m working on with Amazing Avocado. Not that I’m complaining!

April 8th Recap

Monday:Perfect chicken, mashed potatoes, green beans, salad, and fresh fruit salad.

Such a great family meal, and I love that I can cook extra chicken breasts to use throughout the week.

Tuesday: Brinner!
Instead we had hamburgers and hot dogs, sides of salad, fruit, and chips.

Wednesday: Taco night!

Taco night is MY favorite night of the week since cooking and cleanup are a breeze!

Thursday:Leftovers.

Chicken, a burger, and your choice of sides. Best night of the week, right?

Friday:Pizzzaaaaa.

Always a family favorite. True story: my husband and I met while working in a pizza shop.

Saturday: Clean out the fridge night.

Yes, we still had leftovers. It’s a good way to mak room in the fridge for this week’s groceries.

Sunday: Sirloin steaks, fries, salad, and fruit salad.

In the middle of the week I was scheduled to attend a get together where we had to make and eat avocado recipes. Tough, I know, but I took one for the team. ;) Hubby was in charge of dinner and made brinner-his special french toast and bacon with a side of fruit and juice. I binged on amazing avocado recipes (more on that soon!).

What’s on your menu this week?

I’ve neverhad Jasmine Rice, at least I don’t think I have. I should look into that, it just sounds good

It’s really ‘fluffy’. I know that’s a weird word for food, but it’s true! Just make sure you rinse it first. :)

I have to make the chicken dish and tacos. Love both those recipes…and anything with avocados.

I’ve been on a guacamole kick. I see great minds are at play! I like that you have a dedicated taco night. I’m stealing this idea.

ALWAYS eat tacos. ;) My kids all love it so it’s a no-brainer.

You guys and all your tacos. It makes me wonder why I haven’t put them in permanent rotation, because you’re right - they are SO easy!

I’ve been dealing with a sinus infection, and then the seasonal allergies showed up. I need to stock up again on Sudafed!

I’m trying a chicken recipe tonight that Trina shared on her blog. Hopefully, it’s a home run.

I love avocado - tacos, salad, burgers… anything that I can add it too makes a better meal! :)

I’m trying a new pinterest recipe for Rajma Masala. It’s a kidney bean and tomato stew that looks really tasty.
