This week I’m doing something crazy. I’m not making a meal plan. Why? I have a few reasons.
Last week, I was hit with a stomach bug that was beyond brutal. I think I slept about 36 hours over two days and when I was awake I was miserable. When the stomach bug (or any illness) hits at our house we tend to get lax about the meal plan. for one, I wasn’t about to go near anything resembling food. Since we have various evening responsibilities and a new puppy at home cooking dinner got put on the backburner.
It’s nights like those though that sandwiches, cereal, or heck even frozen toaster waffles can be made into a dinner of sorts while all the other responsibilities get handled by the non-ailing parent.
The worst part though-the brunt of my illness was on Bob’s birthday. Um, Happy Birthday, honey! I’m going to bed now. We had proper cake this weekend, but our plans had to be cancelled (a Game of Thrones preview!). Don’t worry though, I’ll make it up to him! He’s going to California with me in a few weeks for a business trip.
I’m still not 100% ‘right.’ I’m eating a limited diet of gluten-free bread, apples, applesauce, and lots of probiotics with things like kefir. I tried eating an actual meal on Saturday night (after a full day of errands/yard work/puppy duty/kid duty) and immediately felt sick again. So, this week I’m on a limited diet.
AND this morning my 10 year old got sick, too. So, that’s another person that won’t be interested in eating much this week.
In addition, I’m heading out of town on Wednesday afternoon for the Type-A Advanced Conference at Walt Disney World. It’s a one day event on Saturday, but I’m taking Audrey (10) for a one on one trip-just her and I. We’ll have a few days to explore the park before the conference, and a few after. It’s going to be AWESOME. Well, once we are through with the stomach bug.
I’ll be speaking on negotiation with the savvy and chic Titania Jordan and the whip-smart and hilarious Roo Ciambriello. I know I’m fangirl-ing, too.
So between stomach flus, new puppies (he’s awesome by the way), and travel there’s sure to be some cooking, but mostly it will NOT be by me.
Monday:
Roast chicken, homemade fries, salad, and honeycrisp apples. (I LOVE these.)
Tuesday:
Gluten-free pasta, baked tilapia, and salad.
Wednesday-Sunday:
I don’t know what the family will be eating but I don’t care I’ll be at DISNEYWORLD! You most likely will find Audrey and I eating our way around the World at Epcot. The Flower and Garden Festival has food stands, people. You can read more about the food here. Even my poor stomach is excited.
