Meal planning has been sparse around these parts the last few weeks (illness including a stomach flu), new puppy craziness, and lots of travel have made for less than perfect meal planning. By now though I’ve learned to shrug it off and get back to it. It’s not a failure, it’s just life.
I ate my way around the world last week, and then we were sick, and now I’m off again to the other coast….to the other Disney. I’m pretty sure this one gets added to my Life List and checked off all at once.
A note on Epcot and the Flower & Garden festival-Urban Eats is the best booth if you’re going, and France makes a killer alcoholic slushie (the orange one). Audrey and I also highly recommend the watermelon slushie at the Florida Fresh booth. (non-alcoholic obviously)
In any case some of the family will be home, and some will be in sunny California, so meal planning will be partially done by me, and then there will be some other folks pitching in, too.
Monday: Baked tilapia, rice, salad, fresh fruit.
Tuesday: Burgers, hot dogs, homemade fries, and salad.
Wednesday: Clean out the fridge night. We bought a new fridge (goodbye 1995 almond colored monstrosity!), but it’s missing a piece of trim and the door is on backwards. So they’re sending us a new fridge.
Thursday - Sunday: I’ll be eating delicious things at Disneyland and attending the Disney Social Media Moms celebration, so this part of the week is out of my hands.
I recently bought this Lodge enamel cast iron dutch oven from Target (on sale-woot!) and it’s perfect for making my Spanish chicken and rice recipe and any number of other recipes. It’s also PRETTY. You can’t underestimate how something pretty can make cooking more fun. It’s also about 1/5 of the cost of a well-known more expensive brand.
