GIANT Meal Plan with Spring Savings

Post-Easter there are tons of great sales on Easter goodies. From candy to Easter staples like ham it’s a great time to stock up and save big on your grocery budget. While you may be tired of egg salad sandwiches if you have (or buy) an extra ham you’ll have just what you need for a week of meals.

Monday: Ham & Egg Burritos and fruit salad

Breakfast for dinner is a family favorite. This ham & egg breakfast burrito is a great way to use leftover ham, and create a hearty dinner.

Tuesday: Pasta with ham & green beans.

This is a quick and easy meal for a busy night whether it’s errands, working late, or a billion after-school activities.

Wednesday: Spring salad-spinach leaves, pistachios, sliced grapes, and goat cheese bruschetta with grilled salsa.

Thursday: Ham pockets and side salad of spinach salad.

Make this homemade dough (or buy pre-made dough) for these ham pockets (and make double for tonight’s dinner and tomorrow night’s dinner). Pair with a spinach salad with a side of fruit like pineapple or grapes. You can even eat these on the go.

Friday: Homemade Pizza and a side salad

Use dough leftover from last night to make pizza dough. Perhaps you’ll make ham and pineapple, goat cheese and basil, or put out all kinds of ingredients and let everyone make their own crazy pizza!

Saturday: Clean out the fridge night. Eat up all those leftovers-yes, even those hardboiled eggs. 😉

  • All-purpose flour (or gluten free flour)
  • Ground black pepper
  • Dried parsley

  • Non-stick cooking spray

  • Dozen eggs
  • Quart nonfat milk
  • Quart skim milk
  • Grated parmesan cheese
  • GIANT shredded part-skim mozzarella cheese
  • Goat cheese

  • Salsa
  • Package of tortillas
  • Whole wheat pizza dough (or gluten free dough)
  • Spaghetti (or gluten free pasta)

    We had pork chops tonight. Tomorrow night is some type of chicken - a few people have posted about bacon wrapped chicken like Gina, so now I am thinking maybe that LOL! Macaroni and meatballs and that’s all I got! :)
