Summer is in full swing and with it lots of late evenings, firefly catching, beach going, and pool swimming. It makes for long (and lovely) days, but we still need to stick to our meal planning routine for both our budget and our waistlines (otherwise we’d be eating junk all day every day).

Monday Meal Plan: July 7th
Monday: Perfect chicken breasts, gluten-free corn muffins, green beans, summer salad.
Tuesday: ‘Star’ burgers (the kids love having these burgers shaped like stars), homemade fries, salad, corn on the cob.
Wednesday: Taco night with my super simple guacamole recipe, taco beef, and all the crazy toppings everyone wants.
Thursday: Fresh fish (not sure what yet since I’ll be buying it fresh!), rice, fruit salad.
Friday: Homemade pizzas, salad, and garlic bread.
Saturday: Clean out the fridge night.
