365 Day Meal Plan: Week 29

Last week was tough. My site's server went down, and it took a few days to get everything back in place. My husband finished a huge project at work, and prepped for an overseas trip. But that's all small potatoes compared to the families who are grieving in Colorado right now. My heart aches for everyone who was affected by this tragedy. It's hard to look at Monday morning the same way now, but I'm trying to move forward knowing that living my life to the fullest is the best way to honor those who lost their lives. Menu Monday with Taco Beef Recipe

This weekend we were away (more on that to come) so Emma and I didn't have our usual Sunday morning routine. Instead we shopped on Sunday afternoon, and it proved to me that our Sunday routine is key to saving money. I spent about $80 more than I usually do at the store, about half that was stocking up on some easy snacks for school since this week is a doozy and another $15 or so was on buying snacks for my upcoming trip later this week. Monday Meal Plan

One of my goals this year is to make sure I make a meal plan each week. Even if I end up straying off course, or we have a hiccup in our schedule we will have ideas in place to help us make healthier and better choices each week. The way I used to meal plan was to make a list of meals and figure out what we wanted/had time for each night. I think the meal plan will help us tremendously. Ok, it's Tuesday, but I still had a menu plan ready yesterday, just didn't have time to post it until now. This week's menu will be simple, since the kids had yesterday off, and today is an "ice" day, and I've heard a nasty rumor they may be off again on Friday! Working from home with kids at home isn't exactly easy after they've been home for the 5th day in a row!
